Double Duty Meals: Steamed Oatmeal and Oatmeal Scones

We've been steaming steel-cut oats in the roaster overnight, waking up to scrumptious warm oats in the morning. The method is simple:

1. Set two cups of steel-cut oats (not rolled) in a bowl and add 6-7 cups of water (the discrepancy in water amount is because I add more water if it will be cooking for more hours). Set the bowl in a slow cooker or roaster and pour water around the bowl- enough so that it reaches about halfway up the outside of the bowl of oats. Turn the slow cooker on low and go to bed.

I do two bowls in a roaster and that feeds 8-10 of us for breakfast. You can do one bowl in a slow cooker if you're feeding fewer people.

BUT...

You can get two breakfasts out of the oats if you make extra. After everyone's had their fill, I set aside a cup of the cooked oats to make Oatmeal Scones for the next day's breakfast.



I cut them after I bake them because I like them to be soft on the inside. If you like them crispy, cut them first and bake them individually like cookies.


I make a glaze with powdered sugar and something- either vanilla, milk, lemon juice, lime juice, cinnamon, or in this case, orange juice.


Oatmeal Scones Jenny Sanders


Serves 8-12



2 T butter
2 T honey
1 cup cooked oatmeal
2/3 cup milk (I use almond milk successfully)
1 3/4 cups whole wheat flour
4 t baking powder
1/2 t salt

Melt the butter and honey together, and mix into the cool, cooked oatmeal. Mix in the milk, half at a time. Mix the flour, baking powder, salt. Mix the dry ingredients into the oatmeal. The mixture is quite moist, but if it can't hold its shape at all, add more flour. Roll/pat into a circle (as above) or scoop into balls and flatten to 1" with dampened hands. Bake on greased cookie sheets at 350 for 15-20 minutes.

Yum! I have a crockpot, which I think is the same as a slow cooker???? Would I put the oats in a bowl and put the bowl in the crockpot or just put the oats directly into the crockpot?

Yep, Maureen, crock pot is the same as a slow cooker. Put your oats and water in a bowl, then set the bowl in the crock pot. Pour more water around the bowl, into the crock pot insert, about halfway up the outside of the bowl of oats. Steams them so nicely!

Hi Kendra,

This is the third or fourth steel-cut oatmeal recipe I've seen this week, and I so want to try it. Could you tell me where in my grocery store I can find steel cut oats? I haven't been able to figure that part out... ;)

Hi Amy- Does your grocery store have a natural foods section? I can buy it in bulk in our natural foods, or even in small containers. I know Trader Joe's carries it, too. It's Irish steel cut oats in a can, but that's too pricey for our big family. Bulk is better for us :)

I add chopped nuts (walnuts, pecans), 1/2 c. b. sugar, 1t. cinn., and 1/2 c. butter or coconut oil and sometimes ground flax seed. The kids also love to top it with maple syrup or jam. Isn't great to have breakfast all cooked when you get up? What a great use for the leftovers. Will definitely have to give this a try? Do you make a double batch of the scones? Thanks for sharing!

So, would you mind posting a pic of the stuff in the roaster/ crock pot as you set it up in the evening? (finished product pic would be great too.) I think maybe my crock pot is just too small for this project, but I'm having a hard time figuring out how to put a bowl with 2 c oats and 6-7 c water into it.

Kendra! THANK YOU! I have been trying to make steel-cut oats successfully for...oh...YEARS! I always ended up with something very undesirable using my slow cooker! NOW I see the light! ;)

Can hardly wait to make these Saturday/Sunday mornings for my hubby! He will be so excited! :) (He's away during the week on business or I would do it sooner!)

I have to echo what Purple Moose said. I have a large crockpot, but my husband and I are having quite the hysterical time hunting around our kitchen at midnight trying to find something "just right" to put 2 cups steel-cut oats and 6-7 cups of water into my slow cooker. I'm thinking it needs to not be a plastic bowl, yes? Also, not sure how much they expand so how big does this bowl really need to be? It's turning out to be more complicated than I expected, but funny, none-the-less. Any ideas on what I can use?

Nothing special in terms of the bowl. I have a regular-sized salad bowl and a regular-sized crock pot. If you can put two cups oats and 6 cups water in the bowl with a couple of inches to spare, you'll be fine. It won't expand beyond the height of the water. And though it might be a tight fit, it will still work. If you have a roaster, try that instead.

Well, I couldn't find a bowl that would fit in my crock pot! Not sure what size it is, but it is taller than wide. Anyway I found a jar (formerly for salsa :D ) but it would only fit 1 c oats and 3 c water. And I tried the scones this morning, needed extra time to bake. Maybe I made too high of a mound? But they were yummy and I love the double duty idea! thanks Kendra!
